Friendly Fiesta on Cinco De Mayo!

Nothing makes me happier than getting together and hosting dinner for my nearest and dearest. I love making Mexican food, it’s easy, affordable, and always a crowd pleaser! Cinco De Mayo is Thursday, so I wanted to share two of my easiest and most used recipes so you too can host an impromptu fiesta!

No feast is complete without tacos. Utilizing my slow cooker, I am able to produce tender, “I’ve been working all day on this” Shredded Pork Carnitas, which is a great base for a taco bar. All you have to do is set out tortillas, shredded cheese, lettuce, salsa, guacamole, pico de gallo (save time and find this ready to serve in your grocery store), and sour cream and your guests can help themselves!

What get together is complete without drinks? I’m a big margarita fan, but usually veto the frozen version. No one likes the roar of the blender, and you can only make a few at a time. I love mixing up a big pitcher of Beer Margaritas and setting up a drink station with glasses, salt, and limes. This recipe is foolproof and I always keep the ingredients on hand. These are strong and sweet, you only need one!

All you need to complete the fiesta is the right playlist, some hungry company, and brightly colored décor! Enjoy!
